This coffee comes to us from the Comon Yaj Noptic Cooperative, located along the buffer zone of El Triunfo Biosphere Reserve. The reserve is located in the highlands of the Sierre Madre de Chiapas. It contains Mesoamerica's largest continuous cloud forest and is one of the most biodiverse forest reserves in the world.
Comon Yaj Noptic, which means "all of us think," was founded in 1995 by indigenous farmers in the area. Today they have about 160 members who are keenly focused on producing high-quality coffees. The environmental conditions in the region, such as the altitude and pristine environment, combined with the top-tier varieties grown, like Typica and Bourbon, mean the potential for great coffees.
This offering is an absolutely delicious and balanced chocolate and citrus-forward cup. Brew up a couple cups, you're going to want more than one.
