This coffee comes from the Chelchele washing station, which is in the kebele, or village, of Chelchele, in the district of Kochere, in the Yirgacheffe region. The washing station receives deliveries from many local smallholder producers, most of whom grow on very small plots of land alongside other crops.
As its birthplace, coffee was literally made to thrive in the lush environment Yirgacheffe’s forests provide. The warm tropical climate of the area produces thick vegetation and healthy plant growth. Coffee is typically shade-grown at high elevations with cooler temperatures which slows the maturation of the coffee plants. Slower growth makes the plants focus their energy on reproduction and seed (coffee bean) growth, resulting in coffee cherries with dense seeds and a high concentration of sugars.
This delightful offering perfectly captures the characteristics we love in naturally-processed coffees from Ethiopia. A berry-forward cup with hints of hibiscus-like florals is perfectly balanced by a sweet, milk-chocolate backbone. If you enjoy naturals from Ethiopia be sure to give this one a try!
