Hugo Gualaco has been working with coffee all of his life having grown up around his grandfather and mother cultivating it. He now manages La Vega farm in Huila with his wife and children. This anaerobic natural from La Vega is a classically fruited cup rich with notes of sweet Luxardo cherry and cranberry with a delectable chocolate liquor finish.

The coffee is harvested manually by Hugo and his family. The cherries are manually sorted to remove overripe, unripe (green), and semi-ripe cherries as well as leaves, and other defects. They are then rinsed with water to remove dirt, floaters, and coffee borer-damaged cherries. Then the cherries drain for approximately 2 hours before being placed into bags for a 72-hour anaerobic fermentation.

Once the fermentation is complete, the cherries are washed while still inside synthetic fiber sacks using buckets of water to remove any remaining leachate residues. After allowing the cherries to drain again, they are transferred to the drying beds. The complete drying process takes 20 to 25 days on raised drying surfaces.
