Produced by Wilmer Barrios, owner of Finca de Agua in Huehuetenango, this offering is a remarkably clean example of Guatemalan coffee. We took it to a roast level where the fruit and cocoa flavors can both shine and compliment each other. When freshly brewed, chocolate flavors take the front seat with a more reserved acidity but as the cup cools red grape and citrus notes begin to open up and take the lead.
Finca Ojo de Agua is in Todos Santos Cuchumatanes, an area with many beautiful coffee farms. Wilmer primarily grows Caturra and Catuai varieties but also explores the creation of hybrids. Barrios works to maintain the coffee area already planted and the native forest of their environment. Coffee growing is his livelihood and he takes great care to produce quality coffee.
