This coffee comes to us from Colombian producer Alvaro Andres Roldan. Naturals from Colombia are not coffees that often find their way into our line up but we couldn't be more pleased to have had this one come across our cupping table. A heavier cup filled with notes of cranberry, dark chocolate, and plum, this mouth-watering coffee is like a delectable dessert you don't have to wait until after dinner to have. Have it for breakfast, why not!

As a small producer Alvaro has honed in on producing microlots of the highest quality possible. He is very intentional to only pick the different varieties he grows, which include Castillo, Caturra, and Pink Bourbon, at their peak of ripeness. This coffee is composed entirely of the Castillo variety which presents beautiful purple cherries when ready to be picked.

Alvaro is consistently improving his processing with investments into new equipment such as a zaranda, a sorting table that ensures the coffee is evenly sized and free of defects after depulping. He uses a mix of fermentation and drying styles on the farm from drying on raised beds inside of a greenhouse to utilizing parabolic dryers. This coffee is of course a natural. This means it was allowed to ferment and dry with the majority of fruit left on before being washed and dried for export, giving it the unique fruit-characteristics present in the cup.
