We went to Chiapas, Mexico this past March in search of great coffees. We found those and much more. Having cupped many coffees from various farmers and cooperatives we are proud to present this particular coffee from Finca Santa Gloria. Not only did this coffee stand out on the cupping table, we felt a strong alignment in values with the cooperative, Comon Yaj Noptic, that producer Genaro Perez Heredia chooses to distribute his coffee through. 

Genaro's farm, Santa Gloria is 5 acres and consists of approximately 8,000 coffee shrubs from a mixture of varieties including Bourbon, Caturra, Sarchimor, and Costa Rica 95. The coffee is selectively hand-picked, depulped the same day, then fermented underwater for 18 hours before being washed three times and placed on cement patios to dry for 7 days.

Genaro is a member of the Comon Yaj Noptic cooperative, whose name means "all of us think." As a cooperative, the farmers are dedicated to preserving the environment around them through progressive organic farming practices. A sense of appreciation for nature is strong within the organization whose members' farms dot the buffer zone of El Triunfo Biosphere Reserve. As one of the most diverse forest reserves, El Triunfo contain's Mesoamerica's largest continuous cloud forest and is home to thousands of plant and animal species. 

Having dealt with a massive loss of crops due to La Roya, coffee leaf rust, just a few years ago the various farmers and cooperatives in the region have worked together to find La Roya resistant varietals and best farming practices to beat the disease. They have rebounded with impressive results in resistance and have only managed to increase the quality and taste of the coffee produced.

Coffee grown around El Triunfo Biosphere Reserve has a lot going for it, from a good altitude and lush environment to high quality varietals like Bourbon and Caturra. This offering from Santa Gloria stood out amongst a large lineup of impressive coffees. We couldn't be more excited to add it to our list of offerings and share it with you.
