Rafael Solis Galvez owns the 30 hectare Finca El Cielito in Chiapas, just on the border of El Triunfo Biosphere Reserve. Galvez has 6 hectares planted with coffee, from which this microlot was produced. He grows high-quality varieties such as Bourbon and Caturra which are picked at their ripest and depulped the same day. After depulping, the coffee is fermented dry for 12-13 hours before being washed four times and finally dried on concrete patios for 14 days.
Galvez is a member of the Triunfo Verde Co-op whose member farms are all located on the buffer zone of El Triunfo Biosphere Reserve. As one of the most diverse forest reserves, El Triunfo contain's Mesoamerica's largest continuous cloud forest and is home to thousands of plant and animal species. All coffees grown around it are shade-grown and biological corridors to facilitate bird and animal migrations are maintained.
Having dealt with a massive loss of crops due to La Roya, coffee leaf rust, just a few years ago the various farmers and cooperatives in the region have worked together to find La Roya resistant varietals and best farming practices to beat the disease. They have rebounded with impressive results in resistance and have only managed to increase the quality and taste of the coffee produced. Coffee grown around El Triunfo Biosphere Reserve has a lot going for it, from a good altitude and lush environment to high quality varieties like Bourbon and Caturra.
This particular offering from Galvez presents a full-bodied cup that pleasantly coats the mouth. It took us a little while to pinpoint tasting notes as every time we brewed and tasted it we would quickly finish our cups, reveling in the sweetness of this coffee, but not being able to define what made it such an easy-drinking cup. Full of honey-like sweetness with a silky mouthfeel, this coffee ultimately reminds us of a delicious croissant or puff pastry that is both sweet and buttery while being simple and crushable.
