Remember that honey process coffee we alluded to when we released Honduras Cual Bicicleta by producer Oscar Omar Alonzo? Well this is it! Oscar produces some of the most consistently amazing honey process coffees we've had the pleasure of tasting and we are super excited to bring this one back into our line up. This coffee comes to us from Oscar's second farm, Finca Californeo and is another sugary-sweet offering from him. 

With notes of orange zest and toffee paired with a sweet, creamy mouthfeel this coffee reminds us of an orange creamsicle. The creamsicle melts away to a dried cranberry-like, balanced acidity that rounds out the cup and makes this coffee a truly beautiful one.

The honey process is a halfway point between the natural and washed processes. Natural process coffees are allowed drying time with the coffee cherry fruit left intact, while washed coffees have manual removal of the fruit before drying. The natural process creates recognizably sweet and fruity flavors while washed coffees tend to have a "cleaner" taste profile allowing a wider variety of delicate flavors and acidity to shine through. Honey process coffees are somewhere between the two, some mucilage is left on for drying but not all of it. This often leads to the presence of a fruited/jammy sweetness and a balanced acidity, while retaining higher clarity and a broader spectrum of flavors than naturals.

Lot after lot, Oscar’s coffee continues to impress us. This is the fourth year we have sourced his coffee through Honduran importer De La Finca. Oscar is a good friend of De La Finca owner, Nelson, and one of the first producers they worked with when they first began importing coffee.

With a dedication to "hands-on" organic farming Oscar's continuous commitment to improving his coffee sets his lots apart. One example of his ingenuity in his practices stands out: he discovered that coconut husks retain moisture so he collects discarded husks and buries them in the soil near his coffee trees to provide moisture and nutrients in dry months. Oscar’s innovative farming practices and attention to detail has resulted in a seriously amazing cup of coffee that we can’t wait to share with you.
