This coffee comes to us from the Wondo Dukamo Daye Bensa washing station in the Sidama Region of Ethiopia. The washing station is located in a fertile and forested area near Lake Abaya in the upper Gidabo River basin. 1022 local smallholder producers contribute to this washing station.
Sidama produces some of the highest grade coffees in Ethiopia, and a lot of them. The fertile highlands of the region are surrounded by rivers and lakes that combined with the high elevation result in fertile soil and cool weather. Add to that 100 inches of rainfall per year and the coffee in the region tends to ripen slower than other areas of the country, resulting in sweet, clean coffees that are a treat to drink.
This offering is a beautifully easy-drinking example of a washed process Ethiopian coffee. This coffee has a softer, more green-tea-like body as well as a lower astringency and acidity level than some similar offerings that carry a more in your face black tea leaning flavor and higher acidity. The acidity level on Wondo is just right to help reinforce the jasmine flavors and make the cup very clean tasting without being too much. It's a very sweet cup that is overall a delightfully, light and floral cup that feels just perfect for warmer weather.
