This is the first decaf Pink Bourbon we’ve had the pleasure of sourcing. This variety has skyrocketed in notoriety thanks to its sweet, complex cups that often outscore other coffee varieties from the same farms and regions.
Until recently, Pink Bourbon has been thought to be a mutation of the Red and Yellow Bourbon plants. Recent DNA analysis has shown it may actually be an Ethiopian landrace.
This coffee is decaffeinated using a process that utilizes the solvent ethyl acetate, an ester present in bananas and also a by-product of fermented sugars.
This is one of the most unique, sweet decafs we've have the pleasure of trying. It reminds us of candied almond and blackberry jam.
