We are very excited for the opportunity to carry Luis Guzman's coffee and it just might be one of the best washed Colombian offerings we've ever had the pleasure of roasting.
Our pals at CoTrade brought in Luis' coffee for us to try with a handful of others and it immediately stood out as deserving a place in our lineup.
This coffee is entirely made up of the Caturra variety, cultivated by Luis on his farm situated at 1700masl in the mountains of Guadalupe, Huila. The weather is much cooler and windy in the area offering a very nice microclimate for his coffee. Coffee is collected in a time span of 3 days of picking. Each picking stays in full cherry for 18-24 hours before being delpulped and all mixed together in an aerobic tank and allowed to ferment for total time of 80hr. When the fermentations starts to increase in temperature he starts washing off mucilage. After its reached 80hr he fully washes the coffee and puts it on raised beds to dry.
Luis' is a young producer and hard-working family man with a love for his crop and the details involved in producing great coffee. His attention to quality is evident in the cup - peachy, sweet, clean, and beautifully bright.
