This coffee comes to us from the Idido washing station in the Yirgacheffe micro-region of Ethiopia. The washing station receives deliveries from many local smallholder producers, most of whom grow less than 1-hectare of coffee each in forested "coffee garden" plots.
The name Yirgacheffe is synonymous with some of the best coffees in the world. The warm tropical climate of the area produces thick vegetation and healthy plant growth. Coffee is typically shade-grown at high elevations with cooler temperatures which slows the maturation of the coffee plants. Slower growth makes the plants focus their energy on reproduction and seed (coffee bean) growth, resulting in coffee cherries with dense seeds and a high concentration of sugars.
As the birthplace of our favorite beverage, coffee was literally made to thrive in the lush environment Yirgacheffe’s forests provide, developing nuanced floral characteristics, articulate sweetness and sparkling acidity.
This particular coffee is full of floral honeysuckle, key lime, and black tea. We hope you love it as much as we do!
