This coffee is a regional select consisting of the crops from various smallholder farms in the Cajamarca region of Peru. This blend is a result of Cafe Imports and the exporters they work with in Peru who source and blend based on cup quality and character, seeking a balance of “taste of place” with availability and price.

Cajamarca is a semi-dry, semi-cold, tropical highland of Peru with very fertile soil at high Andean mountain elevations. The main varieties of coffee in the region include Catimor, Caturra, Bourbon, and Typica. Many farmers in the area grow small 2-3 hectare (~5-7.5 acre) farms and have historically worked independently but a recent growth in cooperatives has helped to increase the quality of coffees produced in the area.

This one is a "medium roast" for us meaning it has a little bit more caramelization and lower acidity than something like a washed Ethiopian coffee. With a balanced acidity  this coffee retains an awesome lightly fruited sweetness with notes like raspberry and custard.

This coffee is hard not to like. Die-hard light roast drinkers seeking a little bit more complexity can still find nuanced flavors in this one, while folks who enjoy a little bit more development in the roast can still enjoy a lower acidity level with some delightful fruited flavors.
